Everything you’ll need

This Honey Whipped Ricotta Pear Toast recipe is not only tasty and quick & easy to make; it’s versatile too. Whether you’re in for a quick breakfast, a yummy snack, or a light brunch, this recipe fits the bill. Here’s everything you’ll need to make them:

  • Whole-Grain Bread: The base of our toast, whole-grain bread is a healthier choice than white bread. It’s made from whole grains, providing more fiber and nutrients.
  • Ricotta Cheese: Ricotta is a soft, creamy cheese with a slightly sweet flavor. It’s made from whey and is versatile in both savory and sweet dishes, adding a rich, smooth texture.
  • Honey: A natural sweetener. Honey adds sweetness to the ricotta and pears. It also brings a unique flavor and a touch of natural goodness.
  • Pears: Pears are juicy and slightly sweet fruits that pair wonderfully with the creamy ricotta. They add a refreshing element and a lovely natural sweetness.
  • Mint Leaves (Optional): Mint leaves, if used for garnish, add a pop of color and a hint of freshness to the dish, enhancing the overall presentation and taste.

The Details

The magic starts with toasting some whole-grain bread. Next, spread a creamy mix of ricotta cheese and honey on top. Arrange slices of juicy pears and finish with a sweet honey drizzle. Garnish with a few mint leaves if you like. Each bite is a delightful blend of creamy, sweet, and a little crunchy—a perfect balance of flavors.

To start, whip up a delightful mixture of ricotta cheese and honey until smooth and creamy. The honey-infused ricotta becomes a luscious base that complements the juicy slices of ripe pears perfectly.

Toast some whole-grain bread to a satisfying crunch, and generously spread the honey whipped ricotta on each slice.

Layer on thinly sliced pears and crown this creation with a final drizzle of honey, enhancing the flavors and creating a visually appealing dish.

Garnish with a few fresh mint leaves for an added touch of freshness.

  • 260 g plain flour
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 230 g caster sugar
  • ½ tsp salt
  • 70 ml Greek yogurt
  • 70 ml milk
  • 2 eggs large
  • 200 g blueberries
  • 110 g butter softened
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 190°C (375°F). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the plain flour, baking powder, baking soda, caster sugar, and salt until well combined.
  3. In another bowl, combine the softened butter, Greek yogurt, milk, eggs, and vanilla extract. Beat the mixture until it is smooth and well blended.
  4. Pour the wet ingredients into the dry ingredients. Gently fold the mixture with a spatula or wooden spoon until just combined. Be careful not to overmix; it's okay if there are a few lumps.
  5. Gently fold in the blueberries, being cautious not to break them if using fresh berries.
  6. Spoon the batter evenly into the prepared muffin tins, filling each cup about 2/3 full.
  7. Bake in the preheated oven for about for 5-6 minutes and then continue baking at 170℃ (340℉) for another 15-20 minutes, or until the muffins are golden brown and a toothpick inserted in the centre comes out clean.
  8. Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
  9. Enjoy your blueberry muffins warm or at room temperature with a cup of coffee or tea!
