Ingredients  

  • 2 cups pancake mix store bought or homemade
  • 1 1/2 cups milk
  • 2 large eggs
  • lemon zest
  • 2 tbsp fresh lemon juice
  • 2 tbsp granulated sugar
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 1/3 tsp salt

Instructions 

  1. Make the Pancake Batter: Mix the pancake mix, milk, eggs, lemon zest, sugar, melted butter, vanilla extract, and salt in a bowl until it's smooth. Let it sit for 5 minutes.
  2. Heat Up the Pan: Put a non-stick pan on medium heat and let it get hot.
  3. Cook the Pancakes: Pour a bit of the batter onto the pan for each pancake. Cook until you see bubbles, then flip and cook the other side until it's golden brown.
  4. Make the Lemon Glaze: Mix lemon juice and a little lemon zest with powdered sugar in a small bowl until you have a smooth glaze.
