Preheat the Oven: Start by preheating your oven to 425°F (220°C).
Prepare the Cauliflower: Break down the cauliflower into bite-sized florets.
Toss in Flavor: In a large bowl, toss the cauliflower florets with olive oil and taco seasoning until they're evenly coated. Add salt and pepper to taste.
Roast Away: Spread the seasoned cauliflower evenly on a baking sheet. Pop it in the preheated oven and roast for about 20-25 minutes or until they're beautifully golden and slightly crispy.
Warm the Tortillas: While the cauliflower is roasting, warm your tortillas. We recommend lightly toasting them on the skillet.
Assemble the Tacos: Once the cauliflower is done roasting, grab your warm tortillas and spoon a generous portion of roasted cauliflower onto each one.
