Ingredients  

  • 1 head of cauliflower
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning
  • 2 limes
  • salt and pepper to taste
  • 8 taco-sized tortillas
  • your favorite taco toppings cilantro, salsa, guacamole, etc

Instructions 

  1. Preheat the Oven: Start by preheating your oven to 425°F (220°C).
  2. Prepare the Cauliflower: Break down the cauliflower into bite-sized florets.
  3. Toss in Flavor: In a large bowl, toss the cauliflower florets with olive oil and taco seasoning until they're evenly coated. Add salt and pepper to taste.
  4. Roast Away: Spread the seasoned cauliflower evenly on a baking sheet. Pop it in the preheated oven and roast for about 20-25 minutes or until they're beautifully golden and slightly crispy.
  5. Warm the Tortillas: While the cauliflower is roasting, warm your tortillas. We recommend lightly toasting them on the skillet.
  6. Assemble the Tacos: Once the cauliflower is done roasting, grab your warm tortillas and spoon a generous portion of roasted cauliflower onto each one.
  7. Top It Off: Load up those tacos with your favorite toppings - salsa, cilantro guacamole, lettuce, radishes, cheese, or anything that makes your taste buds happy.
